Dr. Bryan Quoc Le is a Faculty Research Fellow at Pacific Lutheran University, consulting food scientist, and author of the book 150 Food Science Questions Answered. He received his Ph.D. in Food Science from the University of Wisconsin, Madison, where he studied the biological effects of plant-based savory flavors on mammalian cell cultures, and his M.S. and B.S. in Chemistry from the University of California, Irvine. He regularly consults with food startups and companies in the alternative protein sector on food safety, process development, and technical documentation, including Blue Diamond Growers, Lactaclis, TurtleTree, Black Sheep Foods, The Good Food Institute, and many others.
