This presentation is an overview of a recent analysis conducted in collaboration with The Good Food Institute on identifying the optimal sidestream candidates from North America's highest volume crops that could be valorized into protein concentrates, protein hydrolysates, and lignocellulosic sugars for the production of alternative proteins through plant-based ingredient incorporation, precision/biomass fermentation, and cellular agriculture. The presentation will review the major challenges involved, especially the need for research and development to optimize food safety, process design, sidestream functionality, supply chains, and infrastructure. These challenges will be placed in the context of the geographical opportunity areas where these sidestreams are currently produced.
