Hefei Zhao is a postdoctoral scholar in the Department of Food Science and Technology at the University of California, Davis (UC Davis). He obtained his PhD degree in food science and technology from the University of Nebraska-Lincoln (UNL) in 2021. Hefei's study at UC Davis focuses on developing functional ingredients from under-utilized agricultural commodities and then identifying critical natural phenolic compounds using omics data analysis for preserving oil-based foods and cosmetics. He is also working on developing Climate-smart technology by use of California grape and olive pomaces to reduce cows’ methane emissions.
His areas of interest also include developing rapid analytical methods (Machine-Learning-Driven Raman Spectroscopy) to detect food quality and compositions such as edible oils, lipid oxidation, and proteins, and evaluating the functional properties of proteins (plant-based and egg white proteins) for an appropriate application in food products. He is also investigating how to apply intelligent algorithms and mathematic models, such as Genetic Algorithms (GA) and Machine/Deep learning, to solve technique and engineering problems in the field of food nutrition, science, and technology.
