Dr. Janitha Wanasundara is a Research Scientist at Agriculture and Agri-Food Canada. She holds a doctorate in Food Science and has contributed over two hundred peer-reviewed publications, book chapters, and presentations in the area of food protein chemistry and technology. Current research projects she is involved in are to understand seed proteins of crucifer oilseeds and pulses in relation to their structure and properties for efficient utilization in the applications in which they are optimally utilized. She is an adjunct professor at the University of Saskatchewan and is involved in graduate and undergraduate student training in the related discipline. She is a Certified Food Scientist and a Fellow of the American Oil Chemists’ Society.
