Effect of variety, growing location and year on composition and functionality of air-classified faba bean protein concentrates

Abstract: This study was to investigate how variety, growing location and year affected the composition and functionality of air-classified protein concentrates from faba beans. Three varieties (Fabelle, Malik and Snowbird) were grown at three locations (Kamsack, Outlook and Saskatoon) in Saskatchewan in 2019 and 2020. Samples were dehulled and milled into flours before air classification. All tests were determined according to the published methods. Protein, starch and ash content in protein concentrates from faba beans ranged from 63.7 to 71.1% DM, 1.4 to 2.9% DM, and 4.9 to 7.3% DM, respectively. Water holding capacity (WHC), oil absorption capacity (OAC) and oil emulsion capacity (OEC) varied from 0.66 to 0.84 g H₂O/g sample DM, 0.66 to 1.06 g oil/g sample DM and 337.5 to 399.6 mL oil/g sample DM, respectively. Variety, growing location, year and their interactions showed a significant effect on majority of the traits, with growing environment accounting for more variation in those traits than variety. Protein concentrates from Fabelle and Malik variety had higher protein, but lower starch, ash, WHC, OAC and OEC compared to Snowbird variety. Protein concentrates of faba beans grown at Outlook location had the highest protein and ash content. Growing location had no significant effect on starch content in the protein concentrates. Protein concentrates from faba beans grown in Saskatoon had the highest OEC, whereas those in Kamsack had the highest WHC and OAC. Protein concentrates from faba beans grown in 2019 exhibited higher protein, but lower starch, ash, WHC, OAC and OEC than in 2020. In general, it was found that varietal and environmental (growing location and year) factors affected each quality trait of the concentrates differently. Selecting the suitable varieties and growing conditions would lead to the overall quality improvement for protein concentrates from faba beans.
