Jill Winkler-Moser is a research chemist and lead scientist at USDA in the Functional Foods Research Unit in Peoria, IL. She holds a Ph.D. in Food Science & Human Nutrition from University of Illinois in Urbana-Champaign. Her research involves the study of lipid oxidation and antioxidants in frying oils, bulk oils, and foods, as well as the development of oleogels for replacing saturated fats in foods.
