Abstract: Enzymatic interesterification is predominately a continuous industrial practice due to the cost of the immobilized enzyme, activity and reactivity of the biocatalyst, reaction time requirements for complete conversion of the feedstocks, and its low consumption of the enzyme.The development of an efficient Batch Enzymatic Interesterification (bEIE) process using much smaller amounts of biocatalyst, immobilized enzyme, enzyme re-use, and shorter reaction times than published batch enzymatic interesterification processes.These new developments may be used to replace the batch chemical interesterification (CIE) with an enzymatic process that eliminates using sodium methoxide most downstream processing (neutralization, washing, and bleaching) producing a more stable and less processed material.The presentation will discuss enzymes, immobilization, and reaction conditions from laboratory through industrial operation.
