Emerson Nolasco is a Ph.D. candidate in the Department of Food Science and Technology at the University of Nebraska-Lincoln (UNL). Originally from Honduras, he obtained his bachelor’s degree in food science and technology at the Pan-American Agricultural School Zamorano in Honduras. He worked for two years as a production supervisor in a palm oil refinery in Honduras. He graduated with his master’s degree in food science and technology at UNL in December 2019 working on the bioactivity and bioaccessibility of whole egg bioactive compounds. Currently, he works on the anti-hypertensive activity of egg white hydrolysate and its effect on the gut microbiome. He has secured second place in two consecutive years in the AOCS ePoster pitch competition from 2022-2023. Emerson leads the UNL Phi Tau Sigma Chapter and has presented posters at IFT, the International Symposium of Bioactive Peptides, and the Poultry Science Association.
