My name is Cristina Chairez. I am passionate about food science. I am a Agroindustrial Engineering graduated with honors at Universidad Autonoma de Aguascalientes.
I studied a master's in biotechnology at Tecnologico de Monterrey, Mex whit project to plant base proteins obtained to food industry by-products. The thesis project was “Effect of the addition of different sources of protein in bromatological, textural, and microbiological properties in analogue panela cheese”, this project was presented at 2nd International Conference and Exhibition on Food Processing & Technology, Kansas City, MO, EE.UU. where I participated in a poster competition, and I won the first place.
After that I finished my master’s degree, by couple of years I worked in the food industry. I worked at Picsa de Mexico Internacional, Mex in the Research and Development Department. I was a Senior to develop cereals and legumes products. The principal products that I developed were bacon analogue and food for young children, there are extruded soy meal-based products (by-product to oil soy industry).
Afterwards, I started my studies in PhD Biotechnology at Tecnologico de Monterrey, where I have been researching the use of canola meal, a by-product of low economical value obtained from the oil extraction industry. One of the research projects was about Partial characterization of canola (Brassica napus L.) protein isolates as affected by extraction and purification methods. This research project has been published and presented at the AIChE conference.
Another research project was the use of canola meal to obtain peptides with antioxidant activity and hypertensive, where it was looked that peptides obtained to enzymatic hydrolysis have a hypertensive and antioxidant activity. This work was presented in the 5th edition of International Conferences to Functional Foods and Nutraceutical, participated in the poster award and I obtained 3rd place.
In 2023 I won the ELAP (Emerging Leaders in the Americas Program) scholarship, from Affairs Canada, which allowed me to continue his studies on the uses of canola meal, seeking to take advantage of its plasticizing properties to produce biodegradable packaging. I am doing a stay in the Protein and Bioproducts Lab under the supervision of Dr. Nandika Bandara, where I am developing research into the production of biofilms, as an alternative to sustainable food packaging. The general objective of this project is the addition of nanomaterials to canola protein biofilms with the idea to improve their texture, barrier, and thermal properties.
