Tahereh Najib is a postdoctoral fellow at the University of Saskatchewan. She embarked on her graduate studies in department of Chemical and Biological Engineering at the University of Saskatchewan in January 2019. Throughout her academic journey, she has received scholarships and research collaboration, demonstrating her motivation and commitment to her research. Tahereh has made substantial contributions to her field with five journal publications as the lead author or co-author during her PhD program. Moreover, her engagement extends beyond the written word. She has shared her research insights and findings with the academic community by presenting at five prominent conferences.
Her PhD research was specifically modification of lentil flours using germination combined with novel thermal treatments. The findings of her studies suggests that her proposed processing could enhance nutritional/functional properties of lentil flours and provide opportunities for their incorporation into value-added food product formulations. In a world facing the challenges of food security and climate change, these results offer a promising solution by reducing the reliance on environmentally burdening animal-based protein production.
Following the completion of her graduate program, Tahereh has started a new and exciting chapter in her academic journey. She has taken on the role of a post-doctoral fellow in the Department of Food and Bioproduct Sciences at the University of Saskatchewan under supervision of Dr. Supratim Ghosh. In this role, she is passionately pursuing her favorite research aspiration, where she envisions the integration of her background knowledge with practical applications in food industries. She is focusing on preparation of plant-based emulsions and their utilization in development of mixed-colloidal dispersion gels as a low-fat and low-calorie alternative for regular sauces and salad dressing.
