Proteins are an essential nutrient for humans and animals. There is a growing demand for alternative proteins as food or feed. Yet, certain naturally occurring substances associated with alternative proteins can be antinutritional or allergenic and thus lead to negative effects on animal and human health. In this session, we aim to tackle the concerns surrounding anti-nutritional factors and allergies associated with proteins, with respect to their occurrence, properties, measurements or detection, and elimination.
