Tiago C. Pinto is a third-year Ph.D. student in the Department of Food and Nutrition at the University of Helsinki (Finland). With a background in Biological Engineering from the University of Porto (Portugal), Tiago's Ph.D. research focuses on tailoring the digestibility of oil in oleogel formulations. Currently, his work focuses on understanding the evolution of lipid crystals during digestion to potentially modulate lipid digestibility in emulsion formulations.
