Dr. Nancy Asen is a Post-Doctoral Research Fellow with the Department of Food and Bioproduct Sciences, University of Saskatchewan. She has a background in Microbiology and her career in the food started when she worked in the Food service industry in Nigeria. Subsequently, she moved to the United States where she obtained a master in Food Science from Washington State University (WSU). She worked with the Washington State University and University of idaho Food Safety Outreach Program on the completion of her studies in WSU. Afterwards, she moved to Canada where she obtained a Ph.D. from the University of Manitoba with research focused on the valorization of plant-based proteins as an alternative proteins and bioactive peptides. Her current research at the University of Saskatchewan is focused on the deflavouring of protein from oilseeds through washing with different adsorbent resins.
