Ruoshi Xiao is a second-year master's student in Grain science and industry department, at Kansas State University. As a research assistant in Dr. Yonghui Li's lab, her research focuses on extraction, analysis, and modification to better understand and enhance the physicochemical properties and functionalities of plant proteins to create novel, functional, and healthy foods and ingredients, and to understand protein structure-function-applicability relationships.
