Hello there! I'm Tristan Muller, PhD student at the Department of Food Sciences, Université Laval, Quebec, QC G1V 0A6, Canada and I'm currently affiliated with the Institute of Nutrition and Functional Foods (INAF) and the Laboratory of Food Processing and Electro Membrane Processes.
For several years now, I've been interested in the causes and consequences of climate change, with an emphasis on our food systems' impacts. I realized that promoting plant proteins is one of the keys to mitigating climate change. Designing healthy products based on these proteins became my life's goal!
Therefore, after obtaining my master's degree in AgroParisTech (France), I decided to move to Canada (Québec City) and fulfill my dream of studying leaf proteins for human food. I hope that my research will help to democratize these unconventional proteins, because they are totally worth it!
Apart from that, I also love sports (triathlon & badminton), history and video games :-)
