Judith Oballa is a second-year graduate student at the University of Ottawa, Canada, pursuing a Master of Science in Nutrition and Food Bioscience. She earned a Bachelor of Technology in Biology/Education from the Federal University of Technology, Minna, Niger State, Nigeria. Judith's undergraduate studies provided her with a solid foundation in teaching and laboratory procedures. As a graduate student, she worked as a teaching assistant in the field of food nutrition, where she played a crucial role in proctoring exams and final exams, maintaining academic integrity, as well as assisting in creating and managing a strong online assessment system. She is currently an international student representative at the Nutrition Graduate Student Association (NGSA). Building on her proficiency in leadership, project management and commitment to utilizing expertise in nutrition and excellence, she has successfully supervised and mentored undergraduate students for their honored thesis. Judith’s research activities are currently twofold and focus on protein-polyphenol interaction and its influence on digestibility. The first part is set to investigate pea albumin, glutelin and globulin-curcumin interaction and its effects on In vitro gastric digestibility, of which a manuscript has been written and is under review; the second major research theme that she is currently pursuing is focused on the effects of ionic strength on the biomolecular interaction of pea albumin-curcumin and its impact on protein digestibility.
