Eléna Keuleyan is a third-year Ph.D. student at the INRAE Research Institute in France (Nantes), in the Biopolymers, Interactions, and Assemblies research unit. Elena holds a master's degree in Nutrition & Food Science from the Oniris Food Engineering Institute of Nantes. Her current research focuses on the formulation and digestive fate of emulsions stabilized with pea and lupin protein ingredients. She is supervised by Dr. Claire Berton-Carabin, Dr. Anne Meynier, and Dr. Alain Riaublanc. Prior to her doctoral studies, she worked as a research assistant investigating the chemical reactivity of processed meats during digestion at INRAE (Clermont-Ferrand). To date, Eléna has published four research papers, delivered six oral presentations at international meetings, and presented four posters at international conferences. She was awarded the 2024 AOCS European Section Early Career Travel Grant.
