Melissa Marsh is a Ph.D. candidate under the guidance of Dr. Silvana Martini in the nutrition, dietetics, and food science department at Utah State University. She was the 2021-2022 Thomas H. Smouse Memorial Fellowship recipient, and her research is focused on understanding the relationship between oil binding capacity and the physical properties of fats.
