Charlene Van Buiten, PhD is an Assistant Professor in the Department of Food Science and Human Nutrition at Colorado State University. Prior to joining CSU, Dr. Van Buiten earned a BS in Nutritional Sciences from the University of Connecticut and a PhD in Food Science from the Pennsylvania State University where she was awarded a USDA predoctoral fellowship to study the potential for protein-polyphenol interactions to reduce the immunostimulatory capacity of gluten protein. She then completed a postdoctoral fellowship through the National Institute of Health - National Center for Complementary and Integrative Health at Rutgers University focused on functional mechanisms of dietary radical scavengers in the gastrointestinal tract of individuals with metabolic syndrome. As a principal investigator at CSU, Dr. Van Buiten's Food Structure and Function Lab combines her interested in food chemistry and nutritional biochemistry to study the effects of food processing and nutrient interactions on food quality and healthfulness. The group's ongoing projects include investigations into the impact of protein structure on interactions with polyphenols, the relationships between sourdough starter culture microbiomes and bread quality, and multiple collaborative efforts within the area of controlled environment agriculture and optimization of crops such as microgreens and lettuce. The Food Structure and Function Lab is currently funded by USDA-NIFA, the Colorado Agricultural Experiment Station and the California Table Grape Commission.
