Carolina Cantele is a postdoctoral research associate in the Department of Agricultural, Forest and Food Science of University of Turin, Italy. She recently got her Ph.D. degree, with a study focusing on antioxidant activity of phenolipids as related to lipid oxidation in lipid-dispersed systems. She spent six months at University of Massachusetts Amherst (Food Science Department) as visiting scholar working under the supervision of Dr. Eric Decker.
