Aurore Cournoyer is a postdoctoral researcher specialized in the field of food sciences, food by-products and bioactive peptides. She defended her doctoral thesis at the end of february 2024, at Laval University, Quebec. Her academic journey started with a comprehensive four-year bachelor's program in food science and technologies, undertaken at Laval University. During this period, Aurore embarked on two enriching research internships, first at INRS-Institut Armand Frappier in Laval, Quebec, followed by another at VetAgro-Sup in Lyon, France. These experiences initiated her passion for research and broadened her horizons within the realm of food science. Building upon her undergraduate education, Aurore pursued a master's degree in food sciences, where her enthusiasm for research flourished further. Her focus converged on investigating innovative solutions to utilize food by-products effectively, with a keen eye towards mitigating the environmental and societal impacts of the food industry. Her master's studies laid a robust foundation for her ongoing doctoral research.
Aurore's doctoral research delved deep into the realms of food by-products (porcine blood), with a particular emphasis on fostering circular economies within the industry. She just started as a postdoctoral researcher in Laurent Bazinet's research team, working on the development of artificial intelligence tools for the identification of peptides responsible for the bioactivities of water lentil hydrolysates. Beyond academia, Aurore aspires to channel her expertise towards effecting tangible change within the food industry, advocating for sustainable practices and promoting the transition towards circular economies.
