Dr. Youn Young Shim is a Market Consultant in South Korea, for Prairie Tide Diversified Inc. (PTD). She is the primary liaison responsible for establishing, developing, and maintaining new business opportunities for PTD in South Korea. She has also been working at the Department of Plant Sciences at the University of Saskatchewan. She obtained her M.Sc. and Ph.D. in the Department of Bioengineering and Technology at the Korea University (Seoul, Republic of Korea). She had an opportunity to conduct collaborative research with the Food Function Research Division in the Korea Food Research Institute (Kyunggi-do, Republic of Korea) while working on her Ph.D. She was a post-doctoral fellow (Food Sciences) at the University of Guelph (Ontario, Canada) and worked at the Department of Bioproducts & Bioprocessing Agriculture and Agri-Food Canada (Saskatchewan, Canada) in a Canadian Government Laboratory funded by the Natural Sciences and Engineering Research Council of Canada. Dr. Shim was awarded the status of “Best Member” in 2010 from the Association of Korean-Canadian Scientists & Engineers in Canada. She is a reviewer for several journals, the author of 75 peer-reviewed journal articles, and 130 presentations at national and international conferences including 50 invited talks since 1997. Her current research interest is to determine the role of flaxseed proteins and peptides in health outcomes. She coordinates research activities with partner agencies and collaborators in Europe and Asia.
