Xiaoyan Hu obtained her bachelor degree in food science at university of massachuesttes Amherst and continued as a Ph.D student in Dr.David Julian McClements Lab . Her works include studies on emulsion technology for creating plant-based adipose tissue analogs using high internal phase emulsions and emulsion gels and complex coacervation on protein and polysaccharides by publishing in numerous publications in journals such as 'Food Hydrocolloids', 'Innovative Food Science & Emerging Technologies', and 'Foods'.She joined international organizations, including IFT, NEIFT, AOCS, ACS-AGFD, Phi tau sigma and served as the president of ACS-AGFD Umass chapter. She has received USDA sponsership for PhD, the finalist of IFTSA Mars product development , AOCS Honored Student Award, Manley Graduate Scholarship, USDA and numerous other awards, fellowships, and travel grants for her research and academic success. Apart from academic research, Xiaoyan actively participate in internship and attending MIT's Spark program for entrepreneurship. She is preparing for graduating this year and seeking for any possible job opportunity in the relavent field.
