My name is Rasmus Kranold Mikkelsen, and I am a PhD student from the national food institute at Technical University of Denmark (DTU). I have a bachelor’s in chemical engineering from Aarhus University and a master’s in food technology from DTU. I currently work with protein extraction and utilization from brewers´ spent grain. The focus is the usage as new food ingredient with both antioxidants and emulsifying activity.
