Xinyu Liu is currently a second-year Master's student working with Dr. Casimir C. Akoh at the Lipid Biotechnology, Chemistry, and Phytochemicals Laboratory, University of Georgia, Athens, USA. She earned her Bachelor of Science degree in Food Science from the University of Minnesota. During her Master's studies, she conducted research on enzymatically synthesized structured lipids (SL) using grapeseed oil and capric acid. She is also interested in utilizing SL to provide healthier food options. She is focused on further advancing her expertise in this field. Her future goal is to pursue a PhD in the same laboratory at the University of Georgia, contributing to the continued advancements in lipid biotechnology.
