Yu Jin Lee is currently a Ph.D. candidate in integrated biomedical and life science at Korea University. She received a bachelor's degree in food science from the University of Minnesota - Twin Cities. Her research focuses on the enzymatic synthesis of functional lipids in oleochemistry. She is interested in enriching targeted polyunsaturated fatty acids and synthesizing structured triacylglycerol via enzymes.
