I am assistant professor at the University of Lorraine, in France, where I carry out my research in the Reactions and Chemical Engineering laboratory (LRGP), which is a CNRS research unit, in the Bio-Functional Products Engineering (GPBF) team, led by Professor Romain Kapel.
I work on the valorization of agro-resources, particularly plant proteins. I am interested in enzymatic transformation processes (proteolysis, cross-linking...) to improve their functionalities (digestibility, emulsifying, foamin properties) or develop new ones (bioactivity).
