Professor Stephanie Dungan, PhD, is on the faculty at the University of California, Davis, where she has a joint appointment in the departments of Food Science & Technology and Chemical Engineering. Dr. Dungan received undergraduate and graduate degrees in Chemical Engineering from Princeton University and the Massachusetts Institute of Technology, respectively. At the latter she worked with Howard Brenner for her MS and with T. Alan Hatton for her PhD. At UCDavis, she teaches and conducts research in food physical chemistry and chemical engineering, with a focus on thermodynamics and mass transfer of hydrophobic solutes in self-assembled and colloidal structures.
