Building prediction models for foam perception using lab instruments

Abstract: Delivering the desired sensory attributes is a crucial aspect for formulators in the development of personal care products, which significantly influences the consumer's purchase intent. Typically, trained sensory panels or consumers are employed to evaluate the appearance, fragrance, and texture of products throughout the application processes. To mitigate subjectivity in human assessments and reduce assessor hiring costs, there has been extensive research on employing lab instruments to predict sensory attributes as evaluated by trained sensory panels. While much attention has been given to leave-on products like lotions, in which there are reports utilizing rheometry and tribometry to predict certain textural sensory attributes, less attention has been directed towards foam perception of cleansing products. Foam-related sensory attributes, including the amount of foam, bubble size, and foam texture, also play a pivotal role in influencing purchase decisions. In this context, we have developed an instrumental prediction method for human perception of foam. Fourteen body washes, comprising prototypes and marketed products, underwent assessment by both trained sensory panels and instruments. The instrumental measurements encompassed maximum foam volume, foam rheology, tribology after rinse-off, and the rheology of body washes. Our findings reveal that the foam volume generated by an instrument alone is insufficient to predict human perception of foam amount. Instead, a comprehensive consideration of foam volume, foam rheology, tribology, and rheology of products is necessary. We established a prediction model for the amount of foam rated by trained sensory panels, utilizing a linear combination of the four measurements, resulting in a correlation to the panel ratings with an R2 value of 0.9.
