In this presentation, I will give an overview over our work in the Novo Nordisk Foundation funded SEEDFOOD project, in which we aim to generate new and detailed insights into the properties of rapeseed proteins and how to improve them. The role of my research group in SEEDFOOD is the recombinant production and detailed biophysical and computational characterization of the napin and cruciferin isoforms found in rapeseed. Our experiments aim to accompany and inform parallel efforts in SEEDFOOD whereby novel ways to extract and modify rapeseed proteins are being developed, in order to render them more suitable for food applications.
